It’s Thanksgiving Week!!! You know what that means……more Thanksgiving recipes! On the menu today is Broccoli Rice Casserole. I love how creamy and cheesy the rice and broccoli get when they are baked in this casserole. This delicious Broccoli and Rice Casserole is on our Thanksgiving table every year!
I think this will be my 19th Thanksgiving to make this recipe. This Broccoli Rice Casserole was the first dish I took to a family function after I got married. I had always liked broccoli casseroles, especially the ones with rice, so I started looking through various cookbooks I had been given as wedding presents. When I came across this one, I immediately knew that’s what I was looking for. It has been a hit since then and everyone just automatically assumes that I will be bringing it for Thanksgiving every year. It really is good!
I have given the recipe out to several friends over the years and they are still making it as well. As a matter of fact, that is one of the reasons I decided to post this today. I have two friends that text me every year the night before Thanksgiving for the recipe. So I thought, I can just send them here and they will even have a printable that they can keep!
For the Broccoli Rice Casserole recipe, the ingredient list is short and it’s super easy to put together. Now there are a couple of ingredients that get a bad name, but my philosophy is, hey, it’s Thanksgiving! I don’t eat a steady diet of this stuff! I’m a FIRM believer of everything in moderation.
Most of the time I mix this Broccoli Rice Casserole up the night before and pour it in the baking dish and store in the refrigerator. If you do that, just take it out of the refrigerator about 30 minutes before you are going to bake it. I find that sometimes it needs a little extra baking time too.

Broccoli Rice Casserole
Ingredients
- 20 oz. chopped broccoli frozen
- 8 oz Cheese Whiz
- 1 can Cream of Chicken Soup
- 1 can Minute Rice measure in soup can
- 1 stick butter slightly melted
- 1 cup milk
- 1 can mushrooms, chopped optional
Instructions

1. Lightly steam broccoli by cooking in microwave for 3 minutes
2. Melt butter
3. Mix Cheese Whiz, cream of chicken Soup, rice, mix and mushrooms. After broccoli is steamed and butter is melted, combine with the rice mixture.
4. Pour rice mixture into a prepared 9x13 baking dish and bake at 350 degrees for 30 minutes, or until bubbly.
