Happy Fat Tuesday! To celebrate Mardi Gras we are having this Cajun Red Beans and Rice dish tonight! Every year I like to make something Cajun for dinner on Fat Tuesday. I decided to experiment and make my own Red Beans and Rice recipe this year. I think the addition of the sausage will go over well and really makes it into a meal instead of just a side dish.
You are going to start by sautéing the “trinity” of Cajun food, onion, pepper and celery. After that, you will brown the sausage and just pour in your cans of beans add your Cajun seasoning and let it simmer. It seriously could not be easier.
A lot of people are afraid to try Cajun food because they think it will be too spicy. If you don’t like spice, start with just a teaspoon of the Cajun seasoning. I promise it will not be spicy at all, but will just add a great flavor. If you like spice, add 2 teaspoons of the seasoning. If you want even more spice you could always add a few dashes of hot sauce or even a little cayenne pepper.
When I serve Cajun Red Beans and Rice I always use Minute Rice. It’s quick and easy and it’s covered with so much flavor, I don’t see any need to make long grain rice.

Cajun Red Beans and Rice
Ingredients
- 1 tbsp olive oil
- 1/2 onion, chopped
- 1/2 green pepper, chopped
- 4 stalks celery, chopped
- 13 oz smoked sausage
- 5 cans red beans
- 1-2 tsp cajun seasoning
Instructions

Pour olive oil into a large pan. Sautee onion, green pepper and celery on medium heat until translucent, about 5-6 minutes.

Add smoked sausage to pan and cook until sausage just begins to get brown marks on it.

Add canned beans and Cajun seasoning and bring to a simmer. Let simmer 30 minutes to an hour.

Serve over steamed rice
