Caramel Corn

Now that fall is in full swing it has had me in the mood to make some of our favorite fall treats! What is better than caramel corn? How could you go wrong with popcorn, brown sugar, butter and vanilla? Popcorn is one of my absolute favorite foods. I can eat it in just about any variety. I made a batch of this delicious caramel corn over the weekend and my family went crazy over it!

First off, you will need to pop quite a bit of popcorn for this recipe. It calls for 8 quarts of popped popcorn. For those who are challenged in mathematics, that’s 32 cups. Something worth mentioning is that for this recipe, you will not want your popcorn to be too oily. If the popcorn is oily, the gooey, caramel-y goodness will not stick to the popcorn. When I made my caramel corn, I got my popcorn all popped ahead of time and placed it in a very large mixing bowl.


Once I had my popcorn popped, I was ready tor turn it into delicious caramel corn. I took brown sugar, butter, corn syrup, vanilla and salt in a saucepan and brought it to a boil. You will let the mixture boil for 5 minutes stirring occasionally. After 5 minutes, remove the pan from the heat and quickly stir in cream of tartar and baking soda.


Once you have poured all of the gooey deliciousness over the popcorn, stir to help evenly coat the popcorn.


Once you have coated all of the popcorn with the caramel, turn it out onto baking sheets or a large roasting pan. I actually used one large cookie sheet and one roasting pan. Once you get all of the popcorn onto your baking sheets or pans, bake at 250 degrees for 1 hour. You will want to stir about every 15-20 minutes to prevent the caramel corn from sticking.

After it has baked for one hour, spread the caramel corn over waxed paper to cool before it is served or placed into a container for storage.

Once it has cooled, you will be left with the most delicious treat! We have a hard time controlling ourselves with this caramel corn at my house! I hope you enjoy this recipe as much as we always do!


Caramel Corn

Ingredients

  • 3 cups brown sugar
  • 3 sticks butter
  • 3/4 cup white corn syrup
  • 1 1/2 tsp vanilla
  • 1 1/2 tsp salt
  • 3/4 tsp cream of tartar
  • 3/4 tsp baking soda
  • 8 quarts popped popcorn

Instructions

  1. Combine brown sugar, butter, syrup, vanilla and salt in saucepan. 

    Boil 5 minutes, stirring occasionally. 

    Remove from heat and stir in soda and cream of tartar (stir quickly) and pour over popped popcorn in a large mixing bowl.  Mix well. 

    Spread onto baking sheets or roasting pan. 

    Bake at 250 degrees for 1 hour, stirring occasionally. 

     Remove from oven and turn onto waxed paper to cool. 

    Store in airtight container.
