Chicken Casserole

Hey there!!!!  It’s been way too long since I’ve shared a recipe with you.  Things got crazy in the spring with my oldest graduating from high school and heading off to college this fall.  But I’m back now just in time to bring you some great recipes that are perfect for fall and the holidays!

The weather finally started to turn fall-like here in So Ill this past weekend.  Once that happens, my mind instantly goes to comfort food.  Today I’m sharing my husband’s grandma’s chicken casserole recipe.  It is one of the ultimate comfort foods.  This was her signature dish to bring to anyone if they had recently had a baby, a death in the family or she just wanted to show you love.

This chicken casserole is so simple and you won’t believe what the base of this casserole is.   Wait for it……..Stove Top Stuffing!  Now I’m not a Stove Top Stuffing fan usually, but it works so well in this recipe with all the extra things you add in.

You are going to need some cooked chicken for the casserole.  Lately, I have been loving the rotisserie chicken breast quarters you can pick up in the store-prepared section at Sam’s Club.  You get 4 breast quarters for $3.97!  That is a real bargain and the work it already done for you!  Simply pull the meat off the bone and you’re ready to go!  All you are going to have to do is mix the chicken in with the rest of the ingredients and pop the casserole dish into the oven.

This recipe is so easy yet soooo good.  It’s perfect for those nights when you need minimal effort but still want something good and comforting.  This casserole can be made ahead of time and baked later in the day.

Chicken Casserole

This is the ultimate comfort food meal all in one pan

Ingredients

  • 4 chicken breasts, cooked and shredded or cut into pieces
  • 1 box Stovetop Stuffing, chicken flavored
  • 8 oz sour cream
  • 1 can cream of mushroom soup
  • 2 cups chicken broth
  • 1 egg, beaten
  • 4 tbsp butter, melted

Instructions

  1. Preheat oven to 350° and grease a 9 x 13 baking dish

  2. In a mixing bowl combine chicken, stuffing, sour cream, soup, broth and egg.

  3. Pour into the prepared baking dish and drizzle with butter.

  4. Bake 40-60 minutes or until the top is golden brown.
