One of the things I love the most about the spring and summer is being able to grill. We have grilled chicken quite a bit, so I try to change it up. This Chicken Monterey recipe is so easy!
I used to order Chicken Monterey at a local restaurant growing up and loved it, so I knew I had to find out how I could make it at home. Come to find out it only includes 2 ingredients! Chicken and Catalina dressing. It’s so simple, I almost hate to call it a recipe.
The Catalina dressing makes the chicken a little sweet and a little tangy. It’s not spicy at all like a barbeque sauce would make it. It’s just the perfect balance.
This Chicken Montery takes about 2 minutes to put together. Take chicken breasts and place them in a ziplock bag and pour the Catalina dressing over it. Seriously, it’s that easy! I like the chicken to marinate for a couple of hours. If you don’t have that much time, you can marinate it for about 15 minutes and then brush the chicken with some of the dressing at the end of grilling.
We like to have Chicken Monterey with some grilled vegetables and a baked potato or rice. It is great on top of a salad too. Give Chicken Monterey a try next time you grill!
Chicken Monterey
Ingredients
- 4 chicken breasts
- 1 cup Catalina Salad Dressing
Instructions

Place chicken in zip top bag and pour dressing over chicken.

Marinate at least 2 hours.

Grill until chicken is done. The internal temperature should be 165 degrees.
