Copycat Chuy’s Creamy Jalapeno Dip

Cinco de Mayo is coming this Thursday and I cannot wait!  I love to eat Mexican food and drink Margaritas, so a holiday dedicated to that is my idea of a great day!  Today I’m bringing you a recipe that is perfect for your celebration!  It’s a copycat version of Chuy’s Creamy Jalapeno Dip.  If you’ve ever eaten at a Chuy’s, you know exactly what I’m talking about!  This dip has the perfect amount of creaminess, spiciness and zip!

Is this dip hard to make?

No!  You literally toss all the ingredients in a blender and let it go!   It can be made in 5 minutes.  I don’t chop the jalapenos or cilantro.  The blender takes care of that!

If I don’t like spicy things will I like this dip?

If you are sensitive to spice you can still make this dip.  There are two ways you could alter the spice level.  First, you could simply use less jalapenos.  I’d scale it back to 1/8 of a cup.  Your second option would be to use what are called Tamed Jalapenos. You get the flavor of the jalapeno pepper without much spice at all. I wouldn’t suggest leaving them out completely.  The flavor of the pepper is one of the main components of this recipe.

What do I serve with Chuy’s Creamy Jalapeno Dip?

I like to eat this dip with tortilla chips.  It is also great to top tacos or salads with, dip a quesadilla in…..the options are endless.  It really is addicting!

Give this dip a try for Cinco de Mayo!  You won’t be able to stop eating it!

Happy Fiesta!
