I can’t let the Christmas season get by without sharing a cookie recipe. After all, that’s what everybody leaves good old Saint Nick! I feel like December is the month of baking. I would guess there are more cookies baked in the month of December than possibly the rest of the year combined.
It is hard to beat a chocolate chip cookie but I think these Cowboy Cookies do! It’s like a twist on the classic chocolate chip cookie recipe. The addition of coconut, oats and pecans really make this cookie good. But there is a secret ingredient that you wouldn’t expect. Cinnamon. These Cowboy Cookies don’t taste cinnamon-y but it does give the cookie a flavor that you can’t quite put your finger on. It is very subtle.
There are a lot of ingredients in these cookies but if you measure them out ahead of time, they come together quickly.

Cowboy cookies
These perfect cookies have just about everything you can think of in them.
Ingredients
- 1 1/2 c all-purpose flour
- 1/2 tbsp baking powder
- 1/2 tbsp baking soda
- 1/2 tbsp ground cinnamon
- 1/2 tsp salt
- 3/4 c butter, room temperature
- 3/4 c granulated sugar
- 3/4 c light brown sugar, packed
- 2 eggs
- 1/2 tbsp vanilla
- 1 1/2 c semi sweet chocolate chips
- 1 1/2 c oats
- 1 c sweetened flake coconut
- 1 c chopped pecans
Instructions

Preheat oven to 350 degrees.

Mix flour, baking powder, baking soda, cinnamon and salt in a bowl.

Beat butter on medium speed until smooth and creamy, 1 minute. Gradually beat in sugars to combine, 2 minutes. Add eggs, one at a time, beating after each. Beat in vanilla.

Stir in flour mixture a little at a time until just combined, Add chocolate chips, oats, coconuts and pecans.

Using a medium cookie scoop, scoop cookie dough onto parchment lined baking sheets. Let cookies bake about 12 minute, until edges are lightly browned. Remove cookies to rack to cool.
