Honey Nut Snack Mix

The calendar is telling me it is fall, even if it doesn’t feel like it outside.  It might still be hot out, but my internal clock is ready to switch over to fall.  What better way than to start in the kitchen.  This Honey Nut Snack Mix always reminds me of fall!

I love how all of the flavors and textures in the snack mix come together.  The crunchiness of the cereal and nuts are perfect with the chewy cranberries and softened oats.

This snack mix comes together easily and only has to bake 20 minutes.  The hardest part is waiting for it to cool!  Once you gather all of the ingredients, melt the butter, sugar and honey, stir the stuff all together and bake it.  It’s that easy!

This Honey Nut Snack Mix is perfect in lunchboxes or as an after school snack.  It is also great to set around in bowls when you have people over.  I set it out on Halloween because we have a lot of guests in and out because our house is in a very popular area for Trick-or-Treaters.  It would be perfect for a tailgate or even something to munch on while waiting for that turkey at Thanksgiving.

Honey Nut Snack Mix

This snack mix just screams fall!  Warm cinamon flavor with nuts, cranberries and oats.

Ingredients

  • 4 c Quaker Oatmeal Squares with a hint of brown sugar
  • 2 c uncooked quick-cooking oats
  • 1 c pecans, coarsely chopped
  • 1/4 t. salt
  • 1 1/2 t cinamon
  • 1/2 c butter
  • 1/2 c firmly packed brown sugar
  • 1/2 c honey
  • 6 oz sweetened dried cranberries

Instructions

  1. Combine cereal, oats, pecans, slat and cinnamon in a large bowl; set aside

  2. Stir together butter, brown sugar and honey in a small saucepan over very low heat, stirring until butter melts and sugar dissolves.

  3. Pour butter over cereal mixture, stirring to coat.  Spread in a single layer on a foil lined 15x10 inch jellyroll pan.  Bake at 325 for 20 minutes, stirring once.

  4. Stir in cranberries and bake 5 more minutes.  Spread immediately on wax paper and cool.  Store snack mix in an airtight container.
