Hot Brie Kisses

We are under the two week mark until Christmas! How does the time between Thanksgiving and Christmas go so fast but the rest of Winter drags on?    I am nowhere near ready.  I thought with very few activities and social gatherings that I would be ready and bored waiting on Christmas but that has not happened.  If you are like me, you are starting to finalize your Christmas menu.  If you are looking for the perfect one bite appetizer, these Hot Brie Kisses are perfect.  Heck, they are perfect even if you weren’t looking for that kind of recipe.

If you love to do the brie en croute for an appetizer, then you will love this recipe.  This is kind of a take on that appetizer but they are individual bites.  They really are perfect this year since we want to be extra careful about spreading germs!

Hot Brie Kisses are an easy appetizer and take very little time to prepare.  If you want to get a head start on preparing them, you could definitely cut the puff pastry ahead of time, put the pastry into the mini muffin tins and pop the muffin tins back into the freezer until you were ready to bake them. That would just leave placing the pieces of brie and topping with the pepper jelly before baking.

Hot Brie Kisses

The smooth creamy cheese, spicy pepper jelly and puff pastry make a deliciaous appetizer.

Ingredients

  • 2/3 lb brie cheese
  • 2 sheets puff pastry
  • hot pepper jelly

Instructions

  1. Thaw puff pastry at room temperature for about 30 minutes.

  2. Unfold pastry and roll lightly with a rolling pin to remove creases.

  3. Cut each sheet into fourths, then cut each fourth in half. Cut each piece in half again to produce 17 even squares of dough per pastry sheet

  4. Lighly spray mini-muffin cups with cooking spray. Fit a square of dough into each cup. The pointed edges of the dough should extend straight up.

  5. Cut brie into 1/2" squares. Place a piece of cheese into each dough-lined cup. Top with 1/4 teaspoon of pepper jelly.

  6. Bake at 400° for 10-15 minutes or until golden.
