This Italian Sausage Tortellini Soup is so hearty and satisfying. The bit of spiciness from the sausage combined with the Italian herbs, tomatoes, broth and wine are the perfect match for the cheese tortellini. Even your non-soup eaters will enjoy this one!
My mom got this recipe years ago at the Soup Fest at church. When she initially told me that it had Italian sausage in it, I was skeptical. I didn’t think I liked Italian sausage, but this soup changed my mind!
This soup comes together quickly but like most soups, it gets better with time. Don’t get me wrong, it’s good right when you make it, but after it simmers for a while the flavors intensify. If I know I’m going to make this a day ahead of time, I will prep the recipe through step 2 and just bring it back up to a simmer the next day and then add the zucchini and tortellini right before I serve it.
An added bonus to this soup recipe is that my WHOLE family will eat it. My picky 10 year old told me last night that this is his favorite soup! I couldn’t believe it!
Italian Sausage Tortellini Soup
Ingredients
- 1 lb Italian Sausage
- 1 c onion, chopped
- 2 cloves garlic, minced
- 5 c beef broth
- 1/2 c water
- 1/2 c dry red wine
- 15 oz diced tomatoes
- 1 c carrots, thinly sliced
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 8 oz tomato sauce
- 1 1/2 c zucchini, sliced
- 10 oz cheese filled tortellini
- 1 Tbsp dried parsley
Instructions

In a soup pot, brown Italian sausage with onion and garlic. Drain fat from pan

Add all ingredients to soup pot except zucchini, tortellini and parsley. Simmer 30 minutes.

Then add zucchini, tortellini and parsley. Continue simmering until zucchini and tortellini are tender.

Serve with crusty bread and fresh grated parmesan cheese
