Mexican Cheese Dip

Raise your hand if you like Mexican Cheese Dip!  I seriously can’t imagine anyone not raising their hand!  Everybody loves Mexican Cheese dip, right?

To go along with the Restaurant Style Mexican Rice recipe I posted Monday, today I’m bringing you a recipe for Mexican Cheese Dip.  I’m going to have you all set for Cinco de Mayo!

The thing I like most about this recipe is that it has a nice thin consistency.  I think the key is using the cheese you get from the deli counter. I use Land O’Lakes brand because that was what was suggested and it works great.  You won’t get the same consistency if you use a product like Velveeta Queso Blanco.  To me, it thickens up too quickly.

It will literally only take you five minutes to whip this up.  My kids devour this Mexican Cheese Dip every time I make it.

Invite some friends over for Cinco de Mayo or just make it for yourself.  Either way, I guarantee you it will be a hit!

Mexican Cheese Dip

This is just like the delicious white cheese dip you will find at your favorite Mexican Restaurant.

Ingredients

  • 1 1/4 lb American cheese from the deli counter
  • 2/3 cup whole milk
  • 1/2 cup cold water
  • 6-10 pickled jalapeno slices, chopped
  • 2 tbsp pickled jalapeno juice

Instructions

  1. Cut cheese into 1 inch cubes
  2. Stir together cheese, milk and water into a large microwave safe bowl.  Microwave on high for 5 minutes, stopping to stir after every minute.  The mixture might seem water during the first few stirs, but should come together as a nice runny consistency after all the cheese is melted. 
  3. Remove from microwave and stir in the rest of the ingredients.
  4. Serve immediately with tortilla chips.
