Slow Cooker Taco Soup

I don’t know about where you are, but where I am it is currently snowing.  I can’t believe that it’s just the beginning of December and we have already had snow several times.  It definitely seems like we are in for a loooooong, colllllllld winter.  When the temperatures are this cold, all I want is soup.  So I guess you can expect a lot of soup recipes from me here in the next several months.  I have toyed around with doing a “Souper Sunday” series.  We shall see.

The first soup up for this winter is Taco Soup.  I know everybody has a recipe for it, but there are a few tweaks I make to mine that makes it the best!  The fact that it can be made in a slow cooker makes it even better!

Apple Pie

I don’t know about you, but we have lots of apples at our house right now.  What better way to use those apples than in an apple pie?

I will admit that I was kind of on the fence about apple pie until I tried this recipe.  I took a community education class with a local caterer and she changed my mind about apple pie forever!

As with any really good pie this starts with a home made crust.  If making pie crust is not your thing, you can use refrigerated, but you really will be missing out.  Personally, I think home made crust is a must.  I like to make my dough up a little ahead of time and let it chill.  It is much easier to roll out when the dough is chilled.

Dressing

What would Thanksgiving be without dressing?  I think it would be just another day.  Hands down, the dressing is my absolute favorite part of Thanksgiving!  It is something I look forward to all year.

Dressing, or stuffing as some people call it, can really spark a debate among people.  Different parts of the country have different versions of dressing.  I realize I live in Illinois, but I consider our part of the state very Southern, especially when it comes to food.

Dumplings

Now that we are into November my mind instantly starts thinking about Thanksgiving.  Over the next couple of weeks I will be sharing some recipes that are Thanksgiving staples.  Today I am sharing my Grandma’s dumpling recipe.

My Grandma was a great cook.  Her fried chicken was the best I’ve ever had, but she was probably most well known for her dumplings.  She came from a very large family and she was always in charge of making the dumplings for the family reunion every year.  In fact, some of her nieces and nephews bought her a bigger pan to make sure there would be enough for everyone to enjoy.

Cheesy Chicken Vegetable Soup

Here in Southern Illinois we went from Summer to Winter weather all within a week.  I am afraid we are skipping Fall altogether this year.  We have had a lot of soccer and football games in the cold, damp weather and that has left me craving soup.  We have already had soup twice in one week!

I hadn’t made Cheesy Chicken Vegetable Soup in a couple of years, but I won’t make that mistake again!  I forgot how good it is!  This soup is one of those recipes that feels like a guilty pleasure because of the cheese, but is actually not too bad for you.

Snickers Apple Salad

Fall has finally arrived here in Southern Illinois!  Last week it felt like Summer might go on forever!  With cooler temperatures finally showing up, I have a feeling the apple orchards and pumpkin patches will be packed.

One of my favorite fall treats is a caramel apple.  This Snickers Apple Salad reminds me of a caramel apple, only better!  You get the flavors of apple, caramel and nuts, but you also get the creaminess of the cool whip and cream cheese mixture along with chocolate!

Honey Nut Snack Mix

The calendar is telling me it is fall, even if it doesn’t feel like it outside.  It might still be hot out, but my internal clock is ready to switch over to fall.  What better way than to start in the kitchen.  This Honey Nut Snack Mix always reminds me of fall!

I love how all of the flavors and textures in the snack mix come together.  The crunchiness of the cereal and nuts are perfect with the chewy cranberries and softened oats.

Perfect Lasagna

Now that summer is coming to an end, we are starting to want hearty, comforting food.  In my husband’s eyes, there is nothing more comforting than a big pan of lasagna.  I definitely think pasta is his love language!

There are so many great things about this lasagna recipe that make it perfect.  It is thick and rich, can be made ahead of time and feeds a lot of people!  Those three things make this one of my go-to recipes, especially when I need to take food to people.  It’s also great to serve company because all  the prep is done ahead of time and it frees me up to visit with my guests.

Grand Slam World Series ~ Panama City Beach, Florida

After a busy travel baseball season, our 10U Southern Illinois Team Dinger finished with a World Series win.  The boys competed in a week-long tournament at Frank Brown Park in Panama City Beach, Florida.  The tournament was hosted by Grand Slam Baseball.

This was the largest tournament we have competed in so far.  There were 117 teams from 9 states with age brackets starting with 8U all the way up to 14U.  We played against teams from Texas, Louisiana, Georgia, Tennessee and Mississippi.

The week started off on Sunday with a skills competition in each age division and that was followed by an opening ceremony and parade at Pier Park.  While waiting for the parade to start the players also were able to trade team pins.  This was kind of like the equivalent to trading pins at Disney.  The kids really enjoyed it.  Our team won the “Around the Horn” competition for our age group!

After the skills competition we were able to get the kids out to the beach in their uniform for some pictures.  I love the way they turned out!  I’m so glad we were able to capture this once in a lifetime experience.

The tournament was set up as a double elimination tournament and every team was guaranteed 4 games with play through at least Thursday.  Each team had a day off on either Monday or Tuesday.  Our day off was Monday and we had our 2 pool play games on Tuesday.  Bracket play began on Wednesday.

Tuesday was a long, hot day.  We played a game, sat a game and then played our second game.  Luckily Frank Brown Park has awnings covering all the bleachers and a large section in the middle of all the fields plus several covered picnic areas near the fields as well.  I was surprised that coolers were allowed.  Most everyone brought snacks and just hung out at the park between games.  If you know me, you wouldn’t be surprised that I left and shopped a little and picked up Chick-fil-a!  Hey, it was my vacation afterall!

Wednesday started our bracket play which was just one game a day.  The only complaint I have is that we were scheduled to play in the afternoon everyday since we were the number 1 seed.  It was so hot, but it didn’t seem to bother the boys too much!  Thursday and Friday were the same.

Since we had won all of our games up to Saturday, we would have to beat three times to not win the Championship.  Thankfully, that was not the case.  We won our first two games on Saturday and we were crowned champions!

The players each received a ring and the team was awarded a 7 foot trophy.  It was the biggest one I’ve ever seen!  It had to be taken apart to get it home!

Overall it was a great tournament.  The boys played great and a lot of memories were made!  Here are the final statistics for SI Team Dinger for this tournament:

Our record was 6-0

The average number of runs scored was 10.33 with a total of 62.

The average number of runs allowed was 1.33 with a total of 8.

These boys played some good baseball!

Of course, it was not all baseball, they were able to have some fun too.  We enjoyed spending time at the beach and pool.  The coaches even took the boys to a movie one night.

I think it’s safe to say that everyone  had a great time and it was well worth the trip!

Our Favorite Pasta Salad

There is nothing like eating a nice cool salad to help beat the summer heat!  This pasta salad is a family favorite at our house.  Every single person in our household will eat it, which is a nice bonus!

Another thing I really like about this pasta salad is that you can adapt it to whatever your tastes are.  I put different things in all the time.  You can even change the pasta shape to your preference or whatever you have on hand.
