I don’t know about where you are, but where I am it is currently snowing. I can’t believe that it’s just the beginning of December and we have already had snow several times. It definitely seems like we are in for a loooooong, colllllllld winter. When the temperatures are this cold, all I want is soup. So I guess you can expect a lot of soup recipes from me here in the next several months. I have toyed around with doing a “Souper Sunday” series. We shall see.
The first soup up for this winter is Taco Soup. I know everybody has a recipe for it, but there are a few tweaks I make to mine that makes it the best! The fact that it can be made in a slow cooker makes it even better!
This Taco Soup starts with all the usual ingredients. Hamburger, tomatoes, beans, corn and taco seasoning. One of the “secret ingredients” of this recipe is a dry ranch dressing packet. I know it sounds like a strange combination, but just trust me! I also like to use a can of Ranch Style Beans in place of a can of regular pinto beans. It just gives it a little extra flavor. If you can’t find these, a can of regular pinto beans would work. The other tweak I make will probably make this soup controversial, especially with the sodium police. I add two taco seasoning packets. There I said it! The first time I made this taco soup I felt like it didn’t have enough flavor. My mom and I discussed it and both decided that an extra taco seasoning packet would make sense because there are two pounds of hamburger.
This Taco Soup comes together in no time. All you have to do is brown hamburger and open some cans. The slow cooker does the rest. Another great thing about this soup is that it feeds a lot of people and is a crowd pleaser. I like to serve taco soup with a toppings bar. My favorite toppings are, shredded cheese, sour cream, a sprinkling of green onions and some tortilla strips.
This soup is the perfect dinner for a busy weeknight, especially during this busy holiday season. You can prep it the night before and just put it in the slow cooker in the morning. I love coming home at the end of the day and my dinner is done! Give this Taco Soup a try, I think you’ll love it!
Taco Soup ~ Slow Cooker
All the goodness of a taco, only in soup form!
Ingredients
- 2 lb hamburger
- 2 cans diced tomatoes
- 1 can Rotel, diced tomatoes with green chiles
- 15 oz tomato suace
- 1 can black beans
- 1 can Ranch Style Beans If you can't find these, use pinto beans
- 2 cans white and yellow corn
- 1 can diced green chiles
- 2 package taco seasoning
- 1 package ranch dressing mix
Instructions

Brown and drain hamburger and place in large slow cooker.

Add taco and ranch seasoning mixes and mix with hamburger.

Add all remaining ingredients and mix together well.

Cook on low setting for 6 hours or high setting for 3 hours.
