May is Strawberry month, right? I don’t know that that’s official, but in my mind it is. One of my favorite things to do while strawberries are in season is make Strawberry Shortcake.
When I refer to Strawberry Shortcake, I’m not talking about those sponge cake shells you find in the bakery of your grocery store. My Strawberry Shortcake recipe is made with home made pie crust cut in to strips. The crust really doesn’t take long to make and it is SO MUCH BETTER than the store bought stuff.
If you’re intimidated about making pie crust from scratch, this is the perfect time to try it. It really doesn’t matter if it’s pretty. It will be cut in to strips and no one will ever know what it looks like. Trust me…….just try it!
There really isn’t much to this Strawberry Shortcake recipe other than slicing some strawberries and whipping up some heavy cream. Once those are done, let them chill in the refrigerator while the crust bakes and cools. I love to serve Strawberry Shortcake in pretty glass dessert cups. Place a few pieces of pie crust in the bottom and top with some strawberries (be sure to get some of that delicious juice that the strawberries and sugar make) and a dollop of whip cream!
Try this version of Strawberry Shortcake, I promise you’ll love it!
Strawberry Shortcake
Ingredients
- 1 cup flour
- 1/2 cup shortening
- 2 tbsp ice water
- 2 lb strawberries, sliced
- 1/3 cup plus 3 tbsp sugar divided
- 1 pint heavy whipping cream
Instructions

Cut shortening into flour with a pastry cutter until the mixtures looks like course meal. Add water and mix together until all ingredients are combined.

Flour the surface and roll crust out. Cut strips about 1 inch wide by 4 inches long. Transfer crust strips to a baking sheet. Sprinkle with 1 tablespoon of sugar.

Bake at 350 degrees for 8 minutes or until lightly browned. Cool on a wire rack.

Stir together sliced strawberries and 1/3 cup of sugar. Place in refrigerate and let macerate.

Pour the heavy whipping cream and 2 tablespoons of sugar into a chilled bowl. Whip with an electric mixture until stuff peaks form.

Once strawberries are macerated and crust is cooled, place several strips of pie crust in individual serving dishes and top with strawberries and whipped cream.
