Tomato Pie

One of my favorite things in the summer is the fresh garden tomatoes.  I love them plain with salt and pepper, with basil in a salad, on a bacon sandwich, the list goes on and on.  But one of my absolute favorite things to make with fresh, summer tomatoes is Tomato Pie.

I’ve taken this Tomato Pie to a lot of picnics and cookouts and I always get a request for the recipe.  I think I have taken it every year to our church picnic.  It pairs well with grilled burgers, chicken, fish and steak.  But it also is delicious with comfort food as well.

There are two components to this Tomato Pie recipe.  The first is the crust.  I know you’ve heard me say it before, but if you have time, home made crust is the way to go.  It doesn’t compare to the store bought.  If you are running short on time or making crust is just not worth it to you, then just pick one up at the store.  If you do have time, try this crust recipe.

The second component of the pie is the filling.  The filling consists of fresh garden tomatoes and a mayo/cheese mixture.  You want to peel and chop your tomatoes.  I like to drain off the extra juice that comes out of the tomatoes before placing them into the prepared pie shell.  That will help the pie shell from getting soggy.  When I make the mayo mixture, I always use dried herbs.  If you wanted to use fresh, you might need to adjust the amounts.

Tomato Pie

This savory pie made with fresh garden tomatoes is a great addition to your summer menu!

Ingredients

  • 1 pie crust
  • 3 garden tomatoes, peeled and chopped
  • 1 c mayonnaise
  • 1 c shredded cheddar cheese
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • 1/2 tsp parsley
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Preheat oven to 350 degrees

  2. Prick pie shell with a fork and cook 10 minutes.

  3. While pie shell is cooking mix mayonnaise, spices, salt, pepper and cheese together.

  4. After pie shell has baked for 10 minutes, remove from the oven and line with chopped tomatoes. Top with mayonnaise mixture.

  5. Bake for 25 minutes. Let cool slightly and serve.
