Saturday is the 144th Kentucky Derby! It’s billed as the “Greatest Two Minutes in Sports.” We love to watch it every year.
The excitement builds as you watch each horse promenade in from the stables to the starting gate. The real excitement is when you hear that starting gate open and the announcer say “……aaaaaand they’re off!” You hear the gallop of the hooves and you’re on the edge of your seat until the winning horse crosses the finish line!
If you’re going to be watching The Derby, you should at least have something to snack on. This Galt House Rebecca Sauce and Strawberries is the perfect Derby Day treat!
The Galt House is a hotel in Louisville (that’s where the Kentucky Derby is) and rumored to be the creator of this Rebecca Sauce which is really popular during Derby week. It is most notably served with strawberries, but would be good with other fruits as well.
It takes no time to stir the Rebecca Sauce together. You probably already have all the ingredients on hand that you need. Sour cream, brown sugar and vanilla. I have to admit, I do not add rum or bourbon to this.
I love the combination of the tanginess from the sour cream mixed with the vanilla and brown sugar. It’s a nice refreshing treat that is cool and not too sweet.
I think this Rebecca Sauce and Strawberries would be perfect to serve at a wedding or baby shower, ladies luncheon or a nice treat for a girl’s pool day.
Make this Rebecca Sauce and serve with strawberries while they are in season!

Galt House Rebecca Sauce and Strawberries
Ingredients
- 1 cup sour cream
- 1/4 cup brown sugar
- 1/2 tbsp vanilla extract
- 1/2 tbsp dark rum or bourbon optional
- Whole Strawberries with stems on
Instructions

Combine all ingredients except strawberries, and stir until completely smooth. Chill before serving.
