Grandma’s Oatmeal Corn Flake Cookies

This week I am going to be featuring several new holiday recipes.  This cookie is one of my absolute favorites!  I will have both sweet and savory, so I’ve got you covered!

When I think of Christmas cookies, my Grandma’s Oatmeal Corn Flake Cookies are the first ones that come to mind!  They are the perfect mix of crispy and chewy and include just about everything but the kitchen sink!

If you think you only like simple cookies such as chocolate chip or peanut butter, I urge you to try these.  Everyone that tries them loves them…..including kids!

There are quite a few ingredients in this cookie but if you measure all of the ingredients out ahead of time, they come together easily.  The dough is not real dough-y.  Just kind of shape into balls and place on the cookie sheets.  The end result is delicious.

Oatmeal Corn Flake Cookies

The combination of oatmeal and cornflakes make these cookies irresistible.

Ingredients

  • 1 c butter, softened
  • 1 c white sugar
  • 1 c brown sugar (heaped and packed)
  • 1 1/2 c flour (scant cups)
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 2 eggs, beaten
  • 2 c quick cooking oatmeal (scant cups)
  • 4 c Corn flakes
  • 2 c English walnuts
  • 1 1/2 c raisins
  • 1 c coconut
  • 1/2 tsp salt

Instructions

  1. Cream together butter and sugar until fluffy. Add eggs, mix well.

  2. Mix flour, baking soda, cinnamon, salt, raisins and nuts until well coated. dd to the creamed mixture. Mix well.

  3. Mix in oats and corn flakes.

  4. Scoop onto greased cookie sheets about 3 inches apart.

  5. Bake at 350 10-12 minutes.
