Nordstrom Cafe’s Tomato Basil Soup

I think it’s safe to say that it’s Soup Season.  There are very few places it’s not cold or at least chilly right now.  When we are in the middle of winter I could eat soup every day.  Luckily, for me, my family likes soup too.  Not sure they would eat it every day, but they are definitely on board with it once a week!  I try to rotate so we don’t repeat too often, but this Tomato Basil Soup from Nordstrom Cafe is one that could easily be on repeat.

Have you ever noticed that recipes that have simple ingredients are sometimes the best.  Well, that’s definitely the case with this one!  I never really liked tomato soup before, but this one is so delicious!  If all you’ve had is the canned stuff, give this one a try.  I promise it doesn’t even compare.  Just think of a really good pasta sauce but in soup form.

Not only do I love the flavors of this soup, it is very easy to make.  There are no roasting tomatoes involved in this recipe.  If you use good quality canned tomatoes like San Marzano you won’t need to.  The most complicated part of this recipe is chopping some onion and carrots.  You saute those and let the vegetable broth and tomatoes simmer for a while and that’s about it. You can have restaurant quality Tomato Basil Soup in under an hour!

There are very few good things that have came out of this global pandemic but Nordstrom Cafe sharing their Tomato Basil Soup on Instagram was definitely one of them!  The fact that the recipe is not complicated makes it even more of a winner!

Nordstrom Cafe's Tomato Basil Soup

Ingredients

  • 1/3 c extra virgin olive oil
  • 1 yellow onion, finely chopped (about 8 oz.)
  • 1 c carrots, peeled and finely chopped
  • 1 1/2 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 2 tsp dried basil
  • 56 oz. San Marzano or Italian Style plum tomatoes in juice
  • 1 quart vegetable stock
  • 16 oz. heavy whipping cream
  • 1/2 oz fresh basil leaves

Instructions

  1. Heat olive oil in a large dutch oven over medium high heat. Add onion and carrots. Let cook 3-4 minutes until vegetables soften and start to caramelize.

  2. Add salt, pepper and dried basil. Stir and let cook for 1 minute.

  3. Add tomatoes and broth. Cook 20-25 minutes on a low simmer.

  4. Add cream and cook 5 more minutes.

  5. After cream has cooked for 5 minutes, add fresh basil and puree soup with an immersion or regular blender. Make sure soup is completely pureed.

  6. Serve in bowls with additional fresh basil for garnish.
