Hoppin' John

Black eyed peas, rice and smoked sausage combine to make a delicious one pot meal.

Ingredients

  • 1/2 c onion, chopped
  • 3/4 c celery, sliced
  • 1/2 c green pepper, chopped
  • 1 small jalapeno, seeded and finely chopped
  • 1 clove garlic, minced
  • 12 oz. smoked sausage, sliced
  • 1 tbsp olive oil
  • 3/4 tsp oregano
  • 1/2 tsp thyme
  • 1 bay leaf
  • 2 c chicken broth
  • 3/4 c long grain rice, uncooked
  • 2 cans black eyed peas, drained and rinsed

Salt and pepper to taste

Instructions

  1. In a large skillet saute onion, celery, bell pepper, jalapeno and garlic in olive oil for 5 minutes.  Stir in herbs and add smoked sausage.  Saute 2 more minutes.

  2. Add rice and chicken broth.  Bring to a boil.  Reduce and simmer 20-25 minutes until rice is tender.  

  3. Stir in black eyed peas until warmed through.  Season with salt and pepper.
