
Black eyed peas, rice and smoked sausage combine to make a delicious one pot meal.
In a large skillet saute onion, celery, bell pepper, jalapeno and garlic in olive oil for 5 minutes. Stir in herbs and add smoked sausage. Saute 2 more minutes.
Add rice and chicken broth. Bring to a boil. Reduce and simmer 20-25 minutes until rice is tender.
Stir in black eyed peas until warmed through. Season with salt and pepper.
