Pasta e Fagioli Soup

This delicious Italian soup is a cross between vegetable soup and chili.

Ingredients

  • 1 lb ground beef
  • 1 c diced onion
  • 1 c julienned carrots
  • 1 c chopped celery
  • 2 cloves minced garlic
  • 2 cans diced tomatoes
  • 1 can red kidney beans
  • 1 can cannellini beans
  • 1 large can tomato sauce
  • 12 oz. V-8 or tomato juice
  • 1 tbsp white vinegar
  • 1 1/2 tsp salt
  • 1 tsp oregano
  • 1 tsp basil
  • 1/2 tsp pepper
  • 1/2 tsp thyme
  • 1/2 lb ditalini pasta

Instructions

  1. Brown and drain ground beef.

  2. Add onion, carrot celery and garlic. Saute 10 minutes

  3. Add remaining ingredients expect the pasta and simmer for 1 hour.

  4. After 50 minutes, cook past. Drain

  5. Add pasta to pot and simmer 5-10 minutes.
