Cajun Red Beans and Rice

This is a quick and easy version of a Cajun favorite
Servings 6

Ingredients

  • 1 tbsp olive oil
  • 1/2 onion, chopped
  • 1/2 green pepper, chopped
  • 4 stalks celery, chopped
  • 13 oz smoked sausage
  • 5 cans red beans
  • 1-2 tsp cajun seasoning

Instructions

  1. Pour olive oil into a large pan.  Sautee onion, green pepper and celery on medium heat until translucent, about 5-6 minutes. 
  2. Add smoked sausage to pan and cook until sausage just begins to get brown marks on it.
  3. Add canned beans and Cajun seasoning and bring to a simmer.  Let simmer 30 minutes to an hour.

  4. Serve over steamed rice
