Cowboy cookies

These perfect cookies have just about everything you can think of in them.

Ingredients

  • 1 1/2 c all-purpose flour
  • 1/2 tbsp baking powder
  • 1/2 tbsp baking soda
  • 1/2 tbsp ground cinnamon
  • 1/2 tsp salt
  • 3/4 c butter, room temperature
  • 3/4 c granulated sugar
  • 3/4 c light brown sugar, packed
  • 2 eggs
  • 1/2 tbsp vanilla
  • 1 1/2 c semi sweet chocolate chips
  • 1 1/2 c oats
  • 1 c sweetened flake coconut
  • 1 c chopped pecans

Instructions

  1. Preheat oven to 350 degrees.

  2. Mix flour, baking powder, baking soda, cinnamon and salt in a bowl.

  3. Beat butter on medium speed until smooth and creamy, 1 minute. Gradually beat in sugars to combine, 2 minutes. Add eggs, one at a time, beating after each. Beat in vanilla.

  4. Stir in flour mixture a little at a time until just combined, Add chocolate chips, oats, coconuts and pecans.

  5. Using a medium cookie scoop, scoop cookie dough onto parchment lined baking sheets. Let cookies bake about 12 minute, until edges are lightly browned. Remove cookies to rack to cool.
