Strawberry Shortcake

This version of strawberry shortcake served with home made pie crust, fresh strawberries and whipped cream is heaven on earth!

Ingredients

  • 1 cup flour
  • 1/2 cup shortening
  • 2 tbsp ice water
  • 2 lb strawberries, sliced
  • 1/3 cup plus 3 tbsp sugar divided
  • 1 pint heavy whipping cream

Instructions

  1. Cut shortening into flour with a pastry cutter until the mixtures looks like course meal.  Add water and mix together until all ingredients are combined.
  2. Flour the surface and roll crust out.  Cut strips about 1 inch wide by 4 inches long.  Transfer crust strips to a baking sheet.  Sprinkle with 1 tablespoon of sugar.
  3. Bake at 350 degrees for 8 minutes or until lightly browned.  Cool on a wire rack.
  4. Stir together sliced strawberries and 1/3 cup of sugar.  Place in refrigerate and let macerate.
  5. Pour the heavy whipping cream and 2 tablespoons of sugar into a chilled bowl.  Whip with an electric mixture until stuff peaks form. 
  6. Once strawberries are macerated and crust is cooled, place several strips of pie crust in individual serving dishes and top with strawberries and whipped cream.
