Chili Cornbread Salad

Happy Back to School to everyone!  With school starting earlier these days, I find myself in an odd spot when it first begins.  It’s like it’s fall, but yet it’s summer too!  One of my favorite things about this part of summer is the bounty from the garden and farmer’s market.  This Chili Cornbread Salad is one of my favorite ways to use some of that goodness this time of year!

I know Chili Cornbread Salad seems like an odd combination but rest assured, it is delicious!  All of the ingredients work well together and make the best dish.

Ice Cream Sandwich Cake

The heat has been no joke this Summer!  I feel like the intense heat started super early and is still going strong!  Now, I love Summer but the heat this year has been like none other.  When I’m hot, my favorite way to cool off is with ice cream!  Who doesn’t love ice cream?  Sometimes you need something besides a basic scoop and this Ice Cream Sandwich Cake will fit the bill!  The fact that it is a no-bake dessert is a bonus!

What Do I need to make this Ice Cream Sandwich Cake?

You are only going to need a handful of ingredients to put this no-bake dessert together.  You are going to start out with a box of ice cream sandwiches, Cool Whip, hot fudge and caramel sauce and some nuts.  That is it!

Is this dessert hard to make?

No!  Absolutely not!  As a matter of fact, a young child could put it together.  All you do is unwrap all of the ice cream sandwiches, lay them in the bottom of a pan, top with Cool Whip, drizzle toppings and repeat!  This is a great dessert to make when you are short on time.  It can literally be done from start to finish in 10 minutes.  The most time consuming part is unwrapping the ice cream sandwiches!  One thing I have found to make spreading the fudge and caramel sauce easier is to place each jar in the microwave for about 15-20 seconds.  It loosens it up enough to drizzle easier but it doesn’t completely melt it.

What if I don’t like nuts?

You could easily leave the nuts off of this, although I love them.  In addition, you could switch up the kind of nuts you use.  I have used Spanish peanuts before and it reminds you of a Peanut Buster Parfait from DQ.  Walnuts would work well too.  Use whatever kind of nuts you like.

I’ve been making this Ice Cream Sandwich Cake for years and it is always a hit.  It’s perfect to take to parties because it serves a lot of people.  You most likely won’t have any leftovers to take home.  Give this dessert a try this weekend!

Buffalo Chicken Dip

Are you ready for Super Bowl Sunday?  I kind of have mixed feelings about it this year.  I hate that football will be over until September.  But it also feels like it should already be over since they pushed the season a week later.  My internal clock feels off!  I’m not used to the Super Bowl and Valentines day being celebrated at the same time!  Today’s recipe will definitely put you in the football mood!  Is there anything that screams football more than Buffalo Chicken Dip?

As I’ve told you in the past, there are only a few recipes that everyone in my house will eat but this is on that short list.  When polling my family about what they want to eat for the Super Bowl, this Buffalo Chicken Dip is on the list every year!  Two other favorites are what we refer as the “Big Sandwich” and Pepperoni Pizza Dip.

Cherry Berries on a Cloud

Today I am kicking off the month of love with a very festive dessert!  Cherry Berries on a Cloud is the ultimate dessert for Valentine’s Day!  I love a good theme and the red and white color scheme fit perfectly with Valentine’s Day.

I believe I originally got this recipe from Taste of Home.   It’s been a staple at our house for year.  You have to plan ahead a little but it is definitely worth it!

What is Cherry Berries on a Cloud

Cherry Berries on a cloud is a meringue based desert that has a creamy sweet layer with a fruit topping of cherries and strawberries.

How do I make a meringue

A meringue is made when you beat egg whites with an electric mixer for several minutes until stiff peaks form.  You will know you have reached the proper consistency when you raise your beater and the egg whites are past being just foamy but have a point that you could almost bend and they are a bright, shiny white color.  Making a meringue does take a little patience, but it is really easy to do with an electric mixer.

After you have the meringue beaten to the proper consistency, you spread it into a prepared 9 x 13 baking dish and bake it at 250 degrees for one hour.  After it’s done baking, turn the oven off and then leave it in there for 12 hours.  I always do this at night and it just stays in the oven overnight.

How do I serve Cherry Berries on a Cloud

The middle filling of this dessert is made of whipped cream, cream cheese, sugar, mini marshmallows and vanilla. Once the meringue has set in the oven for 12 hours, put the cream filling on top and chill for 4 hours.

While you’re letting it chill, mix together a can of cherry pie filling, sliced strawberries and lemon juice to make the topping.

If you are going to be serving this for an event, you can spoon the topping over the meringue and filling.  It is so pretty.

If you think you want to keep it separate, just slice a piece and top each piece individually with the cherry/berry mixture.

This is such a pretty and delicious dessert.  It definitely makes an impression when you see it and it tastes equally good!  Give it a try for your Valentine this year!
